Why does this happen?

This phenomenon happens because our minds interpret words by forming associations and visual images in addition to hearing them. Therefore, by constantly monitoring your mind to see if you're still thinking about the pink elephant, you're unintentionally reinforcing that concept when you're actively attempting to push it away.
